The 1956 creed

Four words the family never changed.

Alex Crombie set down four principles for the shop in 1956. Three generations on, they still decide everything that crosses the counter.

Hand-selected Scottish meat, cut and made fresh in the shop. Nothing leaves the counter we wouldn't serve at home.

Proper butchery, honestly priced. Advice on the cut, the cooking and the quantity comes free with every order.

Cleanliness

A spotless counter and cold room, kept to a standard a meat inspector would recognise — because the founder was one.

Service

You're served by a butcher who knows your name and your Sunday roast. Seventy years of that is why people still queue.

From a meat inspector's shop to the name Edinburgh reaches for when it wants a proper sausage — the whole story happens on Broughton Street.

  1. 1955

    Alex Crombie opens the shop

    A former bacon curer and meat inspector for the City of Edinburgh opens his butcher's on Broughton Street — and, a year later, writes down his four principles.

  2. 1961

    Sandy takes the counter

    Alex's son Sandy takes over and expands through the neighbouring units over the following decade — more counter, more range, same standards.

  3. 1985

    Scotland's best beef sausage

    The gourmet-sausage era arrives. Crombies wins Scotland's Best Butcher's Beef Sausage and builds a specialist reputation that still stands.

  4. Today

    The third generation, at The Broughton Market

    Sandy's son and daughter-in-law run the counter inside The Broughton Market food store — over 100 sausages, and the same name over the door.

Sausages made our name, but the counter is a proper one: hand-selected Scottish beef, lamb, pork and poultry; dry-aged steaks; bacon and ham; haggis, black pudding and the Scottish pack; pies, and everything for the roast.
